Vegan Flower Rainbow Fettuccine
Ingredients for sauce:
- 5 Tablespoons of Olive oil
- 4 Cloves of garlic
- 1/4 teaspoon of Salt
- Pepper to taste
Instructions for sauce:
Peel the garlic cloves, in small pieces, add salt, pepper and olive oil, mix well, bring to a simmer and save.
Ingredients for the pasta dough:
Instructions for the pasta dough:
Mix AP flour, semolina flour and salt.
Put your flour on a clean table and start adding in the middle the oil, the water and start mixing.
Work your dough until you have a smooth dough ( about 5min) add more water or flour if necessary.
Once you have a smooth dough, cover with plastic wrap and let it rest on the fridge for 30 min.
Once the dough Is chilled, it’s time to add your pasta.
You can use a pasta machine, ( I Used the pasta attachment from KitchenAid I really love it, is really easy to use and the result is perfect!)
But no worries, if you don’t have the pasta machine you can go hand made and it will be as delicious and beautiful it just takes a little more time to stretch and cut.
Start dusting your work surface with flour to prevent your dough from sticking, with a rolling pin start stretching your doing until about 0.5 mm once is thin you can star passing it through the pasta machine, if you are doing it by hand, roll the dough until desired thickness ( about 0.1mm)
Once the dough is stretched, start placing your flower and herbs petals, on half of the dough. I used roses, violas, marigolds, the darker the flower colors the better, but use the ones you love. Herbs are a great addition as well, experiment and be creative! You might surprise yourself.
After half of the dough is covered, on the other half add water with a small brush, so they will attach to each other.
Cover the flowers and pass through the pasta machine one more time or press this the rolling pin.
Cut by hand with a knife or with fettuccine pasta cutter. You will see translucent colors of the petals & herbs inside your dough.
Your dough is ready to cook.
On a large pot with boiling water and salt cook you pasta for 3-5 min ( mine were perfect at 4 min)
Strain and add your garlic sauce, and plate using lots of flowers and herbs, now enjoy!
